Honey Citrus Olive Oil Cake

I adapted this recipe from Christina W. (Fruit + Flower Co.), which she adapted from Tender Greens. She’s an amazing cannabis chef who I have been following for years. I finally had the nerve to try one of her recipes last year and it was delish. I usually just infuse whatever basic recipes I want to make (cookies, brownies, cakes, pasta, etc. with butters and oils I’ve infused with cannabis), but this time I decided to use a cannabis recipe. Below is a non-cannabis recipe that subs honey for sugar.

The honey made the cake more dense.

Ingredients:

  • 2 eggs (at room temperature)

  • 1 cup honey (instead of 1 1/2 cups of sugar)

  • 1 cup milk (or milk alternative)

  • 1 cup olive oil

  • Zest from 1 lemon (save some for garnish)

  • 1 1/2 cups of flour

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

For Decoration:

  • Powdered sugar

  • lemon zest

    Directions:

  • Preheat the oven to 340 degrees Fahrenheit. Grease a round 9-inch cake pan with olive oil.

  • In a large bowl (I used my kitchenAid), cream the eggs and honey together until incorporated and creamy.

  • Then add milk, olive oil, and lemon zest on low speed.

  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt, and, on low speed, add these dry ingredients to the egg mixture until fully incorporated.

  • Pour the batter into the 9-inch round cake pan.

  • Bake until a butter knife (I usually don’t have toothpicks so I use a butter knife) inserted in the center comes out clean, about 45-50 minutes, rotating the pan halfway through baking for even baking.

  • Remove from the oven and let the cake cool for 5 minutes in the pan, then remove from the pan (I flipped it on to a dish) and cool completely. Once cooled, sprinkle with powdered sugar and lemon zest before serving. 

    *Want to make it infused? Dosing: This cake makes 8 servings. I made each serving 5mg of THC per slice using infused olive oil. I already had a batch of infused olive oil that I made with my Ardent (which I love!). You’ll need 40mg THC total in this recipe.
